Grilled Buffalo Chicken Sandwiches

1/4 C Crumbled Blue Cheese (or Feta Cheese)

1/4 Sour Cream (no fat or use Plain Yogurt or Tofu)

1/4 teaspoon Celery seed

1/4 teaspoon Worcestershire sauce

4 boneless skinless chicken breast halves

4 Tablespoons Buffalo Wing Sauce (Watch out for Glutamates!)

4 whole wheat kaiser rolls, split (look in Walmarts Bakery Section, Artisian Breads!)

Heat Grill. In small bowl, combine cheese, sour cream, celery seed and Worcestershire sauce; blend well. Set aside.

Flatten out chicken halves by placing meat between two pieces of wax paper and pounding with medium force using a wooded mallet or rolling pin.

When ready to grill, brush each chicken side with Wing Sauce. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until chicken is fork-tender and juices run clear, turning once.

During last 2 minutes of cooking time, place the Whole Wheat Kaiser Rolls, cut side down, on grill; cook 1 to 2 minutes or until golden brown.

To serve, place grilled chicken on bottom halves of rolls. Top each with cheese mixture. Cover with top halves of rolls.
