Lemon-Rosemary Chicken Breasts

1 lemon

1 1/2 teaspoons finely chopped fresh rosemary

1 small garlic clove, minced

1/4 teaspoon sea salt

Dash pepper

1 1/2 teaspoons olive oil

2 boneless skinless chicken breast halves

cut 2 thin slices from lemon; set aside. Squeeze 2 teaspoons lemon juice from remaining lemon into small bow. Add rosemary, garlic, salt, pepper and oil; mix well.

Drizzle mixture over both sides of chicken breast halves; rub into surface. Place chicken on broiler pan.

Broil 4 to 6 inches from heat for 5 minutes. Turn chicken, placing lemon slices under chicken. Broil an additional 4 to 6 minutes or until chicken is fork-tender and juices run clear.
